This is a favorite salad you can make all-year-long, so as long as you have fresh broccoli on hand. It's a perfect salad to make any time of the year.
Broccoli Salad
1 lb fresh broccoli pieces
1 1/4 cups light mayo
1/2 cup baked bacon
1/2 cup Craisins
1/4 sm red onion
2 Tbsp pecans
2 Tbsp sugar (or Whey Low Sugar substitute)
3/4 capsful red wine vinegar
Chop broccoli stems, and then break off the florets. With a food processor, first pulse and chop the pecans, empty; then bacon, and then onions. Mix all together in a large salad bowl (more photos below).
Helpful Tip
Baking Bacon: (photos below) Place in a COLD oven (rack 2nd from top) setting the heat to 375°F. Bake 20-25 minutes; check often (every 3 minutes) towards the end.
