ORANGE VINAIGRETTE DRESSING:

Make the dressing at least a day ahead for flavors to marry & blend.
Citrus Chicken Salad
Makes: 4 Generous Servings
4 chicken breasts, boneless and skinless (or shrimp)
2 Tbsp brown sugar
3 Tbsp olive oil
2 Tbsp cider vinegar
1 Tbsp Dijon mustard, Country-Style
1 Tbsp fresh lemon juice
1 Tbsp fresh lime juice
1 tsp minced garlic
1 tsp Sweet Ginger (Homemade) add 5 stars!
1/2 tsp salt
1/4 tsp ground black pepper
Marinate 2-4 hours. Grill over.
1 head Romaine lettuce
1 sm. bag baby spinach leaves
1 sm. can Mandarin oranges, drained*
Carrots, matchstick cut
Green onion, slices
Red pepper, dices
Fresh mango, dices
Fresh cilantro, chopped
Tri-Color tortilla strips
Layer lettuce and spinach leaves onto plates. Top with sliced grilled chicken. Serve with remaining ingredients, drizzled with dressing and sprinkled with tortilla strips just before serving.
