Best Chicken Fajitas (Secret)

My darling daughter-in-law, Melanie, shared a fabulous secret with me HOW TO grill fajitas veggies with such an AMAZING FLAVOR.

Believe me, you'll just LOVE it!!! How lucky for us, she learned this truly delicious trick, while working in one of our local Mexican restaurants many, many years ago!




Best Chicken Fajitas

Boneless Meat:
1/2 lb (each) chicken breast and/or sirloin steak
2 tsp BLACKENED SPICE MIX (recipe end of post)
4 Tbsp cilantro, minced
1 fresh lime, squeezed

Sprinkle the chicken and/ or sirloin steak with blackening spice mix and grill both sides, turning to produce grill marks and until the meat is fully cooked through. Remove from heat and tent with foil. Reserve.

Veggies:
1 whole green pepper, sliced
1 whole sweet red pepper, sliced
1 whole red OR yellow onion, sliced
1 cup carrots, match-stick cut (optional, and my added take)
1 cup zucchini, match-stick cut (optional, an my added take)


Here's The Promised Secret Is...
1 cup SQUIRT SODA adds AMAZING FLAVOR!
(Fresca soda does work too) but w/o any sugar...
it's not nearly as amazing, just okay.

Sauté veggies with the citrus soda to obtain that AMAZING FLAVO"secret flavor" that I've been PROMISING YOU all along!

Slice reserved meat, add minced cilantro, fresh lime and sautéed veggies. Serve with tortillas, choice of toppings and related recipes, as desired.

Tortillas and Toppings:
1 (10-count) small tortillas, white or whole-wheat
2 cups shredded cheese, Colby-Jack
2 cups shredded lettuce

 It'll sure kick - UP - your fajitas' flavor SEVERAL NOTCHES.

So Much Better... 
Yet they won't be too HOT...
Just truly more flavorful!

The original recipe source from Allrecipes is hotter, so I've swapped the cayenne and paprika amounts, making it more kid-friendly. However while cooking, it to be strong on the lungs. So go lightly with it and keep the oven fan on while grilling inside. I have found less trouble grilling outside though.

BLACKENING SPICE MIX



2  tsp paprika
1 tsp cayenne pepper
1 tsp dried basil
1 tsp ground thyme
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
1 tsp white pepper
1 tsp sea salt





Combine ingredients in jar; shake before each use.
