Watermelon Strawberry Lemonade



Years ago years ago, I found this great recipe for Watermelon Strawberry Lemonade on a blog called FrostedBakeshop. The original was twice as much, and the bloggers suggest dividing it into two batches.


Since there's just the two of us, I simply cut the recipe down to 4 servings. Plus, I've also added below, (my own) slushie variation below. It's also great for using over-ripe melons, to enjoy a frozen slushy IN (or OUT of) season, later on! 

Ahh, tastes like a sweet glass of "Summer-Time".




Watermelon🍉 Strawberry🍓 Lemonade🍋
Serves: 4

4 cups seedless watermelon, cubed
4 large strawberries, halved
1/4 cup granulated sugar, add more (to taste) 
Zest of 1 lemon, fresh
1/4 cup lemon juice, fresh, add more (to taste)
1 1/3 cups water, CHILLED and divided

DIRECTIONS:

In a blender, add the watermelon, strawberries, and sugar or Whey Low. Using a Microplane Zester, zest in the lemon zest into the blender. Squeeze lemons, and pour in the juice. Add in just HALF the water. Cover, with a few layers of paper towels, between the lid and the blender. Puree, blending the fruit until it completely liquefies. Uncover, and stir in the desired amount of water. Taste to adjust with more sugar and/or lemon juice. Chill at least 1 hour.

Suggestions: Serve unstrained or strained, as desired. However, to serve in a decanter, be sure to strain the pulp off first. Serve chilled with ice. 

Increase Recipe: for larger families and/or for entertaining. 

Sonic Drive-Ins: often sell "Pebble Ice" at rather reasonable prices! Call to check whether YOUR local one does too.



Watermelon🍉 Lemon🍋 Strawberry Slushies🍓

4 cups frozen melon chunks, do not thaw
Zest of 1 lemon, pre-frozen w/ some lemon juice
Lemon juice ice cubes = 1/4 cups fresh juice
1/2 cup Strawberry Freezer Jam, thawed
2 Tbsp granulated sugar, add more (to taste)
   Or Whey Low Granular Sweetener substitute
1 1/3 cups water, CHILLED and divided

DIRECTIONS:

In a blender, add the frozen watermelon. If using zesting fresh zest, with a Microplane Zester, directly zest the lemon into the blender. Squeeze the lemons, and then pour in the juice. Or if using frozen juice with lemon zest, add frozen in with the other ingredients. Spoon the thawed strawberry jam in; add the sugar or Whey Low, plus HALF the water. Cover with a few layers of paper towels, between the lid and the blender. Puree, blending the fruit until the ingredients are completely slushy. Uncover, stir in just a bit more desired amount of water, if any, still keeping it slushy. Taste to adjust with more sugar, lemon juice, and/or more water. Serve immediately.
