Strawberry Ice Cream, Shakes & Frozen Yogurt*

One year, my son gave me a nifty-difty ice cream maker for Mother's Day. Now, I have seen there's a similar newly designed model out on the market.

2 1/2 cups Half & Half (see tip)
3/4 cup STRAWBERRY JAM
1/3 cup granulated sugar
(OR Whey Low For Ice Cream)
1/2 med. lemon, fresh squeezed
1 tsp Pure Vanilla Bean Puree

In a bowl, combine ingredients until well mixed and sugar dissolves.

Turn ice cream maker ON, pour mixture into the freezer bowl through ingredient spout and churn until thickened, about 25 – 30 minutes.

Transfer the soft, thickened mixture into a covered container, first smoothing some plastic wrap directly over top. Freeze until firm to "ripen" (about 4 hours).

Tip: Half & Half (substitute with) 1 1/2 cups whipping cream + 1 cup whole milk.

STRAWBERRY SHAKES

How can it be so easy and still be so good?

2 cups strawberry ice cream
1 cup Half & Half, FAT FREE
2 Tbsp STRAWBERRY JAM (the best!)

Blend ice cream, half and half and jam within a blender until smooth. Thin as desired. Divide between 2 servings.

Tip: In place of the blender, I LOVE, love, love my new Cuisinart stick blender; that baby has real turbo-power!

Strawberry Frozen Yogurt

Frozen yogurt's what I made for my little boys, now big 30-something-year-old young men, (now too) with small boys!

1 cup crushed fresh strawberries
1/4 cup sugar (OR Whey Low For Ice Cream)
2 cups plain premium yogurt
1/2 cup STRAWBERRY JAM
1/2 med. lemon, fresh squeezed
1 tsp Pure Vanilla Bean Puree

In a small bowl, mix crush strawberries and sugar (or WLD); reserve.

In a medium mixing bowl, combine the yogurt, milk and sugar. Using a hand mixer (on medium speed) mix for 1-1/2 to 2 minutes until sugar dissolves.

Add in the jam (on low speed) and mix for 30 – 40 seconds.

Turn ice cream maker ON, pour mixture into the freezer bowl through ingredient spout and let mix until thickened, about 25 minutes.

Add in reserved sweetened strawberries through the spout and allow to mix in. Transfer the soft, thickened yogurt to a covered container, with plastic wrap directly over top the yogurt. “Ripen” for 2 hours in the freezer.

Tip: Now wouldn't you know? Yes, it's true! I make my own premium yogurt too; yes, of course, Ieven make my own yogurt, that'd be another great idea for a post. However, I'm thinking this might just keep ya busy for now. :-)

Enjoy,
Sharon Anne
