Herb Roasted Potatoes

I love these potatoes; they are super easy to roast and go terrific with the chicken! 

Herb Roasted Potatoes, served with Lemon Garlic Chicken.


2 1/2 lbs red or russet potatoes, quartered and unpeeled
1 Tbsp Dijon mustard (country-style)
3 Tbsp olive oil
2 tsp garlic, minced
2 tsp dry basil leaves
2 tsp dry oregano leaves
1 tsp onion powder
1 tsp salt
1/2 tsp cracked black pepper

Combine ingredients with seasonings and herbs, transfer to a baking sheet. Roast uncovered, 400°F for 30-40 minutes, stirring occasionally.
