Spinach Salad & Glazed Almonds

This salad recipe pairs perfectly with my best
Raspberry Vinaigrette Dressing



To make the salad, you want to:
Non-stick Silpats are NICE; cookies and candy don't stick!
 
Glazed Almonds
1 cup raw almonds
1/3 cup granulated sugar
(or Whey Low D granular)


First, heat a heavy skillet over high heat, add the almonds. Generously sprinkle the sugar in, stir until the sugar melts.


Caution: The molten sugar is very HOT.


Immediately transfer the glazed almonds onto a Silpat Mat (or a large non-plastic plate). Completely COOL, before gently breaking apart. Reserve.


Salad & Fruit:
4 cups romaine lettuce
4 cups baby spinach
1/4 cup green onion
1/3 cup crumbled bacon
1/2 cup strawberries
1/2 cup pineapple tidbits
1/2 cup mandarin oranges
1/4 cup dried cranberries

Reserved Glazed Almonds
Raspberry Dressing



Simply layer the greens onto salad plates (or in a large bowl) with the onion, bacon and fruit.

Serve with the glazed almonds and dressing.
