Easy Chicken & Peppers Kabobs

Looking for a simple meal, well... here's one!

Easy Chicken & Peppers Kabobs

Servings: 4


KABOBS:
2 chicken breasts, boneless & skinless
1/2 sweet red pepper, seeded and cubed
1/2 green pepper, seeded and cubed
1/2 yellow pepper, seeded and cubed
1/2 red onion, quartered pieces

MARINADE:
Olive oil
Lime juice, freshly squeezed
Fresh parsley, minced OR cilantro
Garlic powder
Onion powder
Salt & pepper, freshly cracked

PICTURED SIDES:
8 small red potatoes, halved (top photo)
1 lb fresh green beans, steamed - charred (see left)

Kabobs: In a bowl, combine the meat, peppers and onion; drizzle with the olive oil and lime juice. Add parsley and seasonings. Marinate the mixture anywhere from 15 to 90 minutes. Skewer meat and veggies; grill outside or inside a hot cast-iron grill pan (i.e. inside over a cast-iron tortilla skillet, as pictured).

Pictured Potatoes: Quickly marinate the potatoes and green beans (separately) in plastic bags, within the same sort of marinade. Note: You can speed up cooking, by microwaving the potatoes for about a minute each first, and then finish cooking in a deep, hot cast-iron skillet. OR finish roasting on an oiled baking sheet (at 400°F) for 40 minutes or so.

Charred Beans: Steam beans in a steamer and covered saucepan. Then char over in a hot skillet, before serving.
